Sausage Stuffed Shells

These sausage stuffed shells are filled with sausage, cheese, and good times.
Ingredients
1 pound Neese’s Extra Sage Sausage
32 ounces Marinara
16 ounces Shredded Mozzarella
16 ounces Shredded Parmesan
12 ounces Large Pasta Shells
8 ounces Frozen Spinach
8 ounces Ricotta Cheese
8 Basil Leaves
Step One
Set aside spinach to thaw or run under lukewarm water
Step Two
Over medium high heat, cook and crumble the extra sage sausage
Step Three
Once sausage is cooked, remove from heat and allow to cool enough to handle in your hands. Drain fat if desired.
Step Four
In a large pot, add the shells to boiling water. Cook them to an al dente (firm) texture, straining and setting them aside.
Step Five
In the pan you cooked the sausage, add the thawed spinach, all the ricotta cheese, and half of the parmesan and mozzarella. Mix thoroughly.
Step Six
Add a thin layer of marinara to the bottom of a Pyrex baking pan.
Step Seven
Add the sausage, spinach, and cheese mixture into the shells. Place filled shells in Pyrex baking pan.
Step Eight
Once all shells are filled and placed in pan, top shells with the rest of the marinara and then with the remainder of the mozzarella and parmesan cheeses.
Step Nine
Preheat the oven to 350°F. Place the shells in the oven. Cook for 30-40 minutes or until cheese is baked to desired degree. Garnish with basil leaves and serve.
