A hearty chili made from delicious North Carolina sausage
Ingredients
2 pounds Neese’s Hot Sausage
2 Cans Kidney Beans
2 Cans Original Rotel Tomatoes
1 Can Tomato Sauce
1 Can Tomato Paste
1 White Onion
1 Green Bell Pepper
2 Serrano Peppers
1 Tablespoon Chili Powder
1 Tablespoon Garlic Powder
Step One
Dice onion, green bell pepper, and serrano peppers to desired size. We diced ours at about half an inch.
Step Two
Over medium high heat, cook and crumble the hot sausage in a deep pan or pot.
Step Three
Once the sausage is cooked through, reduce to medium heat and add the diced peppers and onions to the pan. Cook them until they are translucent.
Step Four
Add the cans of tomatoes, tomato sauce, and tomato paste to the cooked sausage, peppers, and onions. Then drain the beans and add them as well. Add the garlic powder and chili powder.
Step Five
Reduce to low heat and cover. Simmer until beans are soft or to desired texture, about 2 hours.
Step Six
Serve when hot or store overnight to allow flavors to develop.
