North Carolina Chorizo Tacos

North Carolina sausage meets chorizo in these tacos.
Ingredients
1 Pound Neese’s Hot Sausage
1 White Onion
1 Bunch of Cilantro
Flour or Corn Tortillas
1/2 tablespoon Chili Powder
1/2 Tablespoon Cumin
1/2 Tablespoon Garlic Powder
1 Teaspoon Cayenne Powder
1 Teaspoon Oregano
1/4 Cup Apple Cider Vinegar
1/4 Cup Lime Juice
Step One
Remove the cilantro leaves from the stem after washing. Either chop the leaves or leave them whole for garnishing.
Step Two
Dice the onion to your liking.
Step Three
In a mixing bowl, combine the sausage, all the spices, lime juice, and the vinegar. Mix thoroughly.
Step Four
Preheat Oven to 350°F. Wrap tortillas with tin foil and heat in oven.
Step Five
In a frying pan, cook the seasoned sausage until brown on medium heat. Break into small pieces as it cooks, ideally smaller than a marble. For a charred finish, turn heat up to high and cook for 1 minute before removing from heat.
Step Six
Build the tacos by placing the chorizo, then chopped onion, then cilantro in the tortilla shell.
Step Seven
*Optional* Add a cheese or sauce of your choice. In our photo, we added queso fresco and a lime crema. We made our lime crema by adding 3 tablespoons of lime juice to 1 cup of sour cream.
