A quick sausage frittata recipe perfect for a person on the go
Ingredients
1 Pound of Neese’s Sausage (your preference)
18 Eggs
1 Small White Onion
2 Bell Peppers
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Milk
1/2 Cup of Frozen Spinach (thawed)
Step One
Cook and crumble sausage over medium heat. Drain fat and set aside. Preheat oven to 350°F.
Step Two
Finely dice onion and peppers. Roughly chop the thawed spinach.
Step Three
Beat the eggs in a large mixing bowl.
Step Four
Add milk, cheese, spinach, onion, pepper, and sausage to beaten eggs. Mix gently.
Step Five
Pour egg mixture into muffin tins. Bake in oven for 20 minutes.
Step Six
Remove from muffin tin while hot and serve immediately or freeze and microwave for later use.
